new “quick look” & potato pancakes

I’m overwhelmed by the amount of people following here and praying for Misty on a regular basis. This blog has of course become mostly just a resource to update you all on Misty (and occasionally Olivia or other random things). Since so many are reading each day, I’m finding myself writing longer posts. This is of course a problem for the people that just visit once a week or once a month and don’t want to spend 4 hours catching up. Introduce stage-right: the quick look section (it’s in the column on the right of your screen). I’m going to keep that updated with key posts and a short sentence that gets the point across. So if you only have 90 seconds…you can still see how misty is doing and keep her in your prayers. I also added a calendar tool that lets you quickly find posts from the past. Today was a good day. We are really relieved that her seizure didn’t turn into something worse and leave us in the hospital (like april 26). We woke up late and had eggs and potato pancakes with our usual healthy dose of fresh fruit (we eat quite a bit of fruit). Actually, we liked the potato pancakes so much I’m going to leave you the recipe. Hope you are having a great day!

German-style Potato Pancakes 

What you need:

  • 2 eggs, beaten
  • 4 medium russet potatoes
  • 1/4 cup all-purpose flour
  • 1/4 cup grated onion (you can easily use less onion)
  • 1 teaspoon salt
  • 1/2 teaspoon pepper (if you want)
  • 1/4 cup+ light olive oil (depending on size of you frying pan – you have to cover the bottom well)

Directions:

Mix eggs, flour, onion, salt and pepper in a bowl. Set aside.

Peel and grate the potatoes using the large holes on a hand grater (don’t waste time after you grate these…they get pretty gross quickly). Using a cheesecloth squeeze as much of the water from the potatoes as you possibly can (this is the key to crispy pancakes, rather than a greasy mushy mess). If you don’t have a cheese cloth, just use your hands. Mix the potatoes into the egg mixture.

Heat the oil over medium high heat. Pull out some of the mixture and form it into a small patty – size doesn’t matter too much (I feel like we’re making hamburgers). Fry until the bottom is nicely browned (a few minutes probably – all depends on how hot you get the oil). Flip and fry some more (again, probably 3 minutes). Pull out and drain on a paper towels. Serve immediately with sour cream and applesauce.

    Darren and Misty – praise the LORD! So glad to know you have recovered from the seizure. We continue to hope in the Lord that Misty will be healed. I am reading Prayer by Philip Yancey, it’s very comforting and I highly recommend it. May you be lifted up, encouraged and strengthened today by the Holy Spirit! We love you guys! Katy

    It’s great to know that Misty is better. We are really praying for her today and fasting for her. Hope she feels well today. May God let her have a good day today and every day. May God bless you and your family, and keep Misty, and all of you well.

    Tell her we love her, and hug and kiss Olivia for us. You are a true hero for Misty and you, everyone and God most of all will heal and take care of Misty.

    I am friend of Amy’s and received her email about your journey and my heart broke for you both. I have a strong faith and I promise to keep you both in my prayers. I will continue to pray for your family and will ask for the prayers of mine as well. The power of prayer is stronger in numbers, have faith that god will follow through, and know he loves you both,.

    I hope you feel the love and faith coming to you from Chicago, and It will continue. In the hope of better days ahead~~

    When I read about Misty having a seizure at first my heart sunk and I thought this is just the enemy trying to distract us from the previous days victory and your declaration in Isaiah. So, I began to pray and come into agreement with your prayer and declaration. And God showed me that he can even us a seizure to bring forth good. He can even use a seizure to attack the cancer if he chooses. I believe the seizure was used by God to attack the cancer and that Misty will begin to have even greater progress towards her full recovery.

    Hi Darren,
    I am happy to hear that there were not more seizures. Misty was on my mind all day after that blog. I kept checking to see if you wrote anything else. You were one of the first things I checked for this morning. In fact everyday thats what I do. We all love you, Misty & Olivia so much. We all want to be there for you as you have been there for soooo many of us. Thank you for allowing us to take this road with you & Misty. Tell my girl today, that Lavenia says ” She loves you!”

    Darren, I believe that God is using this to stir us all into action! I am one of those who keeps looking to see if Misty is getting better. It stirs my heart to Pray not only for Misty, but it also ignites my Spirit to pray for my family that is lost. She is in God’s hands,However, if we come to Him again and again He has to move, it is in the word, and He is not a man that He would lie. We must all come with a repentant heart , a broken and contrite heart, is what he requires from us, then He will move. I ask His forgiveness not only for not praying more, but also for the things in my heart that are not pleasing to Him. Thank you for sharing your life with us. I love you all and will continue to stand firm in the power and mercy of God for Misty and you all.

    I’ve made it a requirement to check in everyday to see how Misty is doing and every little improvement makes me smile :) God is testing you and everyone who has been influenced by your family to keep the faith! I’m always praying for Misty and have all of you on my mind everyday. God can work miracles! He can do the impossible!

    God bless you Darren for being such a tremendous support to Misty and loving her unconditionally. You are an inspiration to me everyday. Misty is forever in my prayers! Love you all!

    I’m so glad someone tried the potato pancakes. If you remember to squeeze the water out they do come out good (I have forgotten this of course!).
