eat your greens

If you spend much of any time thinking about nutrition you will know that dark green leafy vegetables pretty much rule the world (especially when you eat them uncooked). If you don’t believe me, go to http://wikipedia.org and search for kale or spinach. Then search for apple or pear and compare the nutritional information for each (and that doesn’t even tell you the full benefits). Now, if you spend anytime trying to feed said “green leafy vegetables” to your family (especially your kids), you will also know that it’s a moderately daunting task. 

Misty does not like leafy greens…at all. So I have to be creative. Necessity is truly the mother of invention, so here are a couple I recently invented. They may not be dinner party worthy- but we are in survival mode, not entertaining mode…and for that, they are perfect.

Apple Kale Salad
This is so easy, and extremely good tasting. Chop up some well rinsed kale or spinach (kale is incredibly good for you, but spinach is too) into small pieces about the size of a dime and place in a small bowl. Fold in some applesauce to coat it all very well.  I use shoprite organic unsweetened - it has great flavor and most of us don’t need to be adding any sugar to our diets.  If you like crunchy, add some walnuts or fresh apple or pear cubes.

Collard Roll
Take a nice medium to large collard green and lay it flat on a plate. Slice a peach into 8 or 10 slices and stack them down the middle of the leaf. Top with cut kale or spinach and roll it up like a burrito. I finish with 2 toothpicks to keep it together till it gets eaten. You have to use a good bit of peach because the collard is strongly flavored. Other fruit is probably good too.

Misty Update:
Unfortunately, Misty had another seizure today. The good news is that I didn’t have to give her a shot for it – it only lasted about 8 minutes and didn’t get worse than just facial movements. The bad news is that she was really out of it afterwards. To the point of not understanding me and just looking around – even not responding to me at all for a minute or two. Poor Olivia probably thought I was mad at her the way I threw her into bed and tucked her in. Oh well…she knows we love her :)

Misty’s cough has cleared up a bit but I’m not sure if that’s the pneumonia going away or just a happy symptom relief from the Mucinex DM. She still has a nasty cough, just gets a little more free time from it. Last night was much better…she slept most of the night.

    Hoping that Misty is feeling better. Sorry to hear about the seizure. But I’m glad that she didn’t need a shot. Praying for more healing from our Lord Jesus and have Him hug Misty in His loving arms and take away the sickness of her pneumonia and keep her seizure free. In Jesus’ name, Amen.

    Dear Darren,
    Praying for you and Misty today. God hears us and I know he is answering prayer.
    I got to see Olivia at church last night with your Mom & Dad. I said hello to her and touched her arm. Then I reached over to give your mom a kiss who was holding her. When I stepped back Olivia reached over to me and gave me a kiss. That just warmed my heart. I had such a big smile and was so happy and she smiled right back at me. LOL!!!!! Kind of reminded me of Misty with her beautiful smile. Now that I think of it. That was probably a kiss from my Misty. Smile. Tell her I love her ok.

    Try boiling a good amount of fresh collard greens in water, seasoned with salt and throw in a few garlic cloves, whole. Boil until the greens are tender. You can, certainly, eat the greens, but the collard liguor is so healthy and soothing. Praying and knowing that God is healing Misty each day. “The Lord bless you (all 3) and keep you. The Lord make His face shine upon and be gracious to you. The Lord lift up His countenance upon you, and give you peace.

    It’s good news that Misty is coughing less and that the seizure was short. God continues to work his miracles on Misty and will until she is healed completely on earth. Keep your faith in Jesus and he will carry you all through this. We love you so much. You never leave our thoughts and prayers.

    May the Lord hide you all under his wings until the storm passes by. I love to envision the thought of him ‘pulling us under’ & tucking us away as the sky gets dark…while we are safely in his warm arms.
    I HATE greens too (team Misty)!! If I can even taste a dot of green, I will gag (sad though). My future daughter in law, a vegan (talk about opposites) taught me the best trick ever. Smoothies!!! I got a vita mix just to make sure & change my eating habits for the better (could use the magic bullet or a blender? i guess). If you throw the entire healthy kitchen sink of healthy veggies (collards, spinach, kale, celery, carrots) in there and add a beet to it (I really hate beets too but it turns a pretty pink & who wants to drink green, right misty?!!) then add a couple tablespoons of honey along with some frozen blueberries & strawberries ….well you never would believe you are eating healthy!! (thin it with water or with any type of juice, I use pomagranate)(sp?). Drink up Misty!!

    Good morning, I am always so moved by the Holy Spirit and the way time and again his presence is revealed to us. The very night that I read your comments about MISTY speaking at an engagement in our area, was the very day I spoke to the LORD about how wonderful a modern day MIRACLE revealed to all of us but most important Misty’s story will be to the many non-believers still in our mist. As our four year old Granddaughter learned of LEPERS and gave us her understanding with the heart so open to the great news, I again realized what a blessing Misty’s story will be. And on that very day, you too mentioned it. GO GOD. Praying the cough leaves. Praising God for your faithfulnes as a loving Husband. So, we will meet, when Misty comes to speak.

    I also have great success with smoothies for my husband and three young boys. I use juice, some type of fruit, pineapple ( it’s strong flavor covers the greens) and then some spinich. If you start with a smaller amount of the greens so they like it, you can gradually add more and they get used to it without even knowing. Sometimes I add some carrots for extra benefit.
    I’m praying for Misty when she comes to mind, which is often. :)

    I don’t know if you remember me, but I am Jennifer and Christin Barna’s mom. We lost our son Jonathan last year in a car accident, maybe you might remember us from that. But I write to say I am praying for you all and so glad to see the positive in each blog everyday.     Praying, praying, so many are praying!!! God hears us and He is faithful to answer. The enemy wants to pull out all the stops to discourage and disappoint. He may have a loud roar but he has no teeth! Defeated by the blood of Jesus!

    Commanding seizures to stop – cough to go – and Misty’s body to function properly as God created it to function!

    How lost I would be without my Mandi. Both of us are praying for Misty,yourself and Olivia. Miracles are real, they just sometimes take a form that we cannot see.
